a bushel of fresh mint

Help! I was gifted this large lovely bunch of fresh mint (which I love love love) and I need to use every last bit of it up. Suggestions? Got any favorite dishes or drinks that use lots of fresh mint?

Mojitos, obviously, and something Vietnamese or North African-inspired for dinner. Or just make a huge pot of Moroccan mint tea and throw it in the fridge so you can enjoy it all week long.

Oh both really good suggestions. I have so much I think some of it will have to become tea. I had thought about chutney, so I had better just go ahead and make some. Thanks!

Corso32 here in e-town has this AMAZING crostini they make with ricotta, mint, spring peas and some romano - blended/processed together, spread on baguette and sprinkled with pine nuts.
