I made quinoa pancakes with blueberry maple syrup for the bf and I on Sunday. They were really delicious and I could feel good about eating them too. The recipe was from Martha, so I can't post it here, but take a standard pancake recipe and replace a cup of the flour (make sure there is still some flour) with a cup of cooked quinoa. Ta-da! It still makes a delicious cake, with a bit of a crunch to each bite and is full of extra protein, nutrients and fiber. Yum.
