Chocolate Beetroot Cake

I recently started following a fantastic foodie blog called What Katie Ate and I was drawn in by the dark, rich, and irresistibly moist photos of her Chocolate Beetroot Cake. Beets are still falling off the shelves at the markets here and so I needed to try this recipe. It did not disappoint, much like a zucchini cake the moisture was brought to a whole new level, in fact it was probably one of the best tasting chocolate cakes I have ever made. I would not cover it in a chocolate ganache again -- I don't think it needs something so rich although I will agree with the creator of the cake that it does really transform into heaven if heated in the microwave.
